どちらも「1つ」。でも a はただの「とある1つ」の目印、one は「2つでも3つでもなく1つ」と数を主張する言葉です。数がポイントの場面だけ one を使います。
Both mean one thing — but a is just the "some one of them" marker, while one insists on the number: one, not two or three. Reach for one only when the count is the point.

よくある間違い / Common Mistake

昨日、新しいスマホを買った。(ただの報告のつもりで)
○I bought a new phone yesterday.
昨日、新しいスマホを買った。
ただ「買った」と伝えたいだけなら a です。one を使うと「2台じゃなく1台ね」と数を確認するニュアンスが出て、聞き手は「なぜ台数の話?」と引っかかります。
If you're just sharing the news, it's a new phone. Say one new phone and listeners hear a count — "one, mind you, not two" — and wonder why the number matters.
one の決まり文句
Set Phrases Built on One
one dayいつか・ある日「いつとは言わないが、ある1日」。物語や願望の定番で、ここは a day と交換できない慣用。Some unspecified day — a set phrase for stories and hopes. You can't swap in "a day."
one of the ...〜のうちの1つ集団の中から1つ取り出して数える型。だから one。Picking one out of a group is counting — so one.
at one pointある時点で時間軸の上の1点、という目盛りのイメージ。A single tick on the timeline — the ruler image again.
one size fits allフリーサイズ(万能型)「サイズは1つだけ」という、数の主張そのもの。A claim about the count itself: only one size exists.
