I like tea and coffee. を否定すると I don't like tea or coffee. になります。and のままだと「両方いっぺんには嫌」という別の意味に読まれます。否定は and を or に反転させる——これだけ覚えれば足ります。neither tea nor coffee と書いても同じ意味です。
Turn "I like tea and coffee" into a negative and you get "I don't like tea or coffee." Leave the and in place and you've said something else, closer to disliking the combination. A negative flips and into or, and that single rule covers it. "Neither tea nor coffee" says the same thing another way.

肯定文の and は2つをひとまとめにします。否定はそのまとまりを外側から打ち消すので、中身をひとつずつ否定する形に組み直す必要があります。それが or の役目です。I don't like tea or coffee. は「紅茶も嫌、コーヒーも嫌」。一方 I don't like tea and coffee. は、まとまりのほうを否定しているように響き、「その2つを組み合わせるのは嫌」と読まれます。
In a positive sentence, and bundles two things together. A negative pushes against that bundle from the outside, so the sentence has to be rebuilt to reject each item on its own. That's what or is for. "I don't like tea or coffee" means neither one appeals to you. "I don't like tea and coffee" sounds like you're rejecting the bundle itself, as though the pairing were the problem.

肯定では and でまとめる。In the positive, and bundles them.

not ... or(両方とも否定)
2つを別々に打ち消す。日常でいちばん使う形。Rejects the two separately. This is the everyday shape.

not ... and(まとまりを否定)
「その組み合わせは違う」という読みになる。狙って使うとき以外は避ける。Reads as rejecting the combination. Avoid it unless that's exactly your point.

「〜も〜も…ない」を and でつないでしまう型です。英語では否定が and を or に反転させます。and のままだと「紅茶とコーヒーをセットで出されるのは困る」という読みが立ち、両方が嫌いだという意味になりません。両方を否定したいときは or、もしくは neither ... nor。迷ったら、肯定文に戻して and で書いてみて、それを否定するときに or へ置き換えると確実です。
This is the pattern that keeps and where a negative belongs. In English a negative flips and into or. Leave the and and the sentence suggests the two arriving together is the problem, not that you dislike each one. To reject both, use or, or reach for neither … nor. A reliable check: write the positive with and first, then swap in or as you make it negative.
